Proxy MOTD - Symbols?!?!

Hey guys,

I have been working on revamping my server MOTD, but with symbols this time, and was wondering how to do it, if you need an example, here is The Hive's current MOTD, and you can see it includes a little sun type symbol, this is what I am looking to do (bu t of course with other symbols too).
